Ingredients
- 4 medium potatoes, boiled, peeled and mashed
- 15 cashewnuts, soaked
- 2-3 tablespoons ghee
- 1 teaspoon cumin seeds
- ¼ teaspoon asafoetida
- 6-8 curry leaves
- 2 medium onions, finely chopped
- 2-3 green chillies, finely chopped
- ¼ teaspoon turmeric powder
- Salt to taste
- A pinch of sugar
- 2 tablespoons chopped fresh coriander leaves
Method
- Heat ghee in a non-stick pan. Add cumin seeds and let them change colour.
- Add asafoetida and curry leaves and sauté for a few seconds. Add onions and green chillies and sauté on medium heat till the onions turn golden brown.
- Add turmeric powder and sauté for a few seconds. Add potatoes, 1cup water and cashewnuts and mix well.
- Add salt and sugar and mix well.Cover and cook on low heat for 4-5 minutes.
- Garnish with coriander leaves and serve hot.
