And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Goan Potato Cashew Curry Recipe

  • Potatoes boiled, peeled and mashed 4 medium

  • Cashewnuts soaked 15

  • Ghee 2-3 tablespoons

  • Cumin seeds 1 teaspoon

  • Asafoetida ¼ teaspoon

  • Curry leaves 6-8

  • Onions finely chopped 2 medium

  • Green chillies finely chopped 2-3

  • Turmeric powder ¼ teaspoon

  • Salt to taste

  • Sugar a pinch

  • Fresh coriander leaves chopped 2 tablespoons


Step 1

Heat ghee in a non-stick pan. Add cumin seeds and let them change colour.

Step 2

Add asafoetida and curry leaves and sauté for a few seconds. Add onions and green chillies and sauté on medium heat till the onions turn golden brown.

Step 3

Add turmeric powder and sauté for a few seconds. Add potatoes, 1cup water and cashewnuts and mix well.

Step 4

Add salt and sugar and mix well.Cover and cook on low heat for 4-5 minutes.

Step 5

Garnish with coriander leaves and serve hot.
