How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Cook time : 21-25 minutes

Ingredients for Lilva Rice Recipe

  • Rice soaked for 30 minutes and drained 1 1/2 cups

  • Surti papdi 100 grams

  • Ghee 3 tablespoons

  • Cloves 4

  • Cinnamon 1/2 inch

  • Ginger chopped 1 inch

  • Green chillies chopped 2-3

  • Green chutney 3 tablespoons

  • Salt to taste

  • Lemon juice 2 teaspoons

  • Fresh coriander sprigs to garnish


Step 1

Heat ghee in a non-stick deep bottom pan, add cloves, cinnamon stick, ginger and green chillies, mix and sauté till fragrant.

Step 2

Add surti papdi, mix and sauté for 2 minutes. Add rice and mix well. Add green chutney and mix well. Add 2½ cups water and mix well. Add salt and mix well. Cover and cook till rice is done.

Step 3

Switch the heat off, add lemon juice and mix well.

Step 4

Transfer into a serving bowl, garnish with coriander sprig and serve hot.
