All the goodness of a bunch of veggies packed into one delicious soup. Carrots, cauliflower, potatoes, mushrooms, cabbage and beans sautéed with bay leaves and onions and cooked in stock and made creamy to give you a nutritious delicious and quick soup.

Ingredients for Mixed Vegetable Soup Recipe

  • Potato finely chopped 1 medium

  • Carrot finely chopped 1 medium

  • Button mushrooms finely chopped 6-8

  • Green capsicum seeded and chopped finely 1 medium

  • Onion finely chopped 1 medium

  • Cabbage finely chopped 1/4 medium

  • French beans finely chopped 6-8

  • Cauliflower grated 1 small

  • Oil 1 tablespoon

  • Bay leaves 2

  • Whole wheat flour (atta) 2 teaspoons

  • Salt to taste

  • White pepper powder to taste

  • Vegetable stock 2 cups

  • Skimmed milk 2 cups

Method

Step 1

Heat oil in a thick-bottomed saucepan, add bay leaves and onion and sauté for two minutes over medium heat. Drain the potato and add. Add carrot, mushroom, cabbage, French beans and cauliflower.

Step 2

Stir and cook on high heat for three to four minutes. medium heat or till flour emits a nice aroma. Add salt and white pepper powder. Stir in the vegetable stock and bring to boil.

Step 3

Add capsicum. Reduce heat and simmer till the vegetables are cooked and the soup reaches a fairly thick consistency. Gradually stir in the skimmed milk and simmer for three to four minutes or till it reaches soup consistency.

Step 4

Remove the bay leaves, adjust the seasoning and serve piping hot.
