Ingredients list for Mutton do Pyaaza - SK Khazana

  • 450 grams Boneless mutton cut into 1 inch pieces and boiled
  • 1/2 cup Onion paste
  • 1 Large onion cut into cubes and layers separated
  • 2 tablespoons Ghee
  • 1 teaspoon Cumin seeds
  • 2 Green chillies slit
  • 1 tablespoon Ginger-garlic paste
  • 1/4 cup Tomato puree
  • 1 teaspoon Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1/3 tablespoon Red chilli paste
  • 1 cup Chicken stock
  • 2 tablespoons Yogurt
  • to taste Salt
  • 1 Large green capsicum cut into squares
  • 1 teaspoon Dried pomegranate seed powder
  • 1 teaspoon Garam masala powder
  • 1 teaspoon Lemon juice
  • to garnish Onion rings
  • to garnish Fresh coriander sprigs
  • to garnish Lemon wedges

Method

  1. Heat ghee in a steel handi. Add cumin seeds and once they begin to change colour, add green chillies and onion paste, mix well and sauté for 2-3 minutes.
  2. Add ginger-garlic paste, mix and sauté for 1 minute. Add tomato puree, mix well and cook for 1 minute.
  3. Add chilli powder, turmeric powder, coriander powder, chilli paste and 2-3 tablespoons chicken stock, mix well and cook for 2 minutes.
  4. Add yogurt, mix well and cook for 1-2 minutes. Add mutton pieces, salt and remaining chicken stock, mix well and simmer for 5 minutes.
  5. Add onion, capsicum and pomegranate seed powder, mix, cover and cook for 5-6 minutes.
  6. Add garam masala powder and lemon juice and mix well.
  7. Transfer into a serving bowl, garnish with onion rings, coriander sprig and lemon wedge and serve hot.
