Ingredients list for Nachni Uttappa

  • 1/2 cup Split skinless black gram (dhuli urad dal) , ground into a batter and kept for 1-2 hours
  • 3 tablespoons Finger millet (nachani) flour
  • to taste Salt
  • 1/4 teaspoon Fruit salt
  • as required Oil
  • as required Green capsicum , finely chopped
  • as required Tomatoes , seeded and finely chopped
  • as required Green chillies , finely chopped
  • as required Fresh coriander leaves , finely chopped
  • as required Ghee
  • to serve Green chutney

Method

  1. Take black gram batter in a mixing bowl, addfinger millet flour and mix. Add sufficient water and mix to get a smooth batter of required consistency. Add salt, mix and set aside for few hours. But if you want to use immediately add fruit salt and mix well.
  2. For each uttappa pour ¼ teaspoon oil on a non-stick tawa and spread it evenly. Pour a ladleful of batter and spread it thickly and evenly. Sprinkle 1 teaspoon green capsicum, 1 teaspoon tomatoes, ¼ teaspoon green chillies, ½ teaspoon coriander leaves and ghee and cook till the underside turns golden brown. Flip and cook till the other side turns evenly golden too. Make more uttappas similarly.
  3. Transfer them onto individual serving plates and serve with green chutney.
