Ingredients                

  • 450 grams potatoes                
  • 1 medium onion                    
  • 2 green chillies                  
  • 1 tablespoon oil                    
  • 1 teaspoon mustard seeds                
  • ¼ teaspoon fenugreek seeds            
  • 1 teaspoon coriander seeds            
  • ¼ teaspoon turmeric powder            
  • 1 tablespoon tamarind pulp                
  • Salt to taste                    

Method    

  1. Peel and wash potatoes. Boil them in salted water until soft, then mash them.
  2. Peel, wash onion and chop coarsely.  Remove stems, wash, slit, de-seed and finely chop green chillies. 
  3. Heat oil and add mustard seeds. When they start crackling add fenugreek seeds and coriander seeds. 
  4. Add onions, green chillies and turmeric powder and fry until soft and brown. 
  5. Pour in tamarind pulp and simmer for five minutes. Finally stir in the mashed potatoes and add salt. Cover the pan and cook gently for five more minutes. Serve hot.
