A favourite with the vegetarians, paneer made from milk is quite common, especially paneer recipes are quite popular in the Indian subcontinent. You can make it fresh, chhena – an another version or just use the ones that are readily available in the market to prepare everything from simple snacks, curries, sabzis, mithais, desserts and the likes. An ingredient that can be relished in the raw form too – try serving it as a starter just sprinkled with a little chaat masala, black salt and chilli powder!

Ingredients for Paneer Khurchan - SK Khazana Recipe

  • Paneer (cottage cheese) 400 grams

  • Oil 2 tablespoons

  • Cumin seeds 2 teaspoons

  • Onions finely chopped 2 medium

  • Ginger-garlic paste 1 1/2 tablespoons

  • Tomato puree 1/2 cup

  • Paneer masala 2 tablespoons

  • Salt to taste

  • Onion cut into thin strips 1 large

  • Tomatoes seeded and cut into thick strips 2 small

  • Mixed colored capsicums strips 3/4 cup

  • Butter 4 teaspoons

  • Dried fenugreek leaves (kasuri methi) powder 1/2 teaspoon

  • Fresh coriander sprigs for garnish

Method

Step 1

Heat oil in a wide shallow non-stick pan, add cumin seeds and saute till they change colour. Add onions and mix well. Cook till they turn golden brown.

Step 2

Meanwhile, cut cottage cheese into thick strips.

Step 3

Add ginger-garlic paste to the pan and saute. Add a little water so that the masala does not burn and continue to saute for 1-2 minutes or till raw smells disappear.

Step 4

Add tomato puree, mix well and saute till the oil separates.

Step 5

Add Tata Sampann Paneer Masala and mix well. Add salt, ¼ cup water, mix well and cook for 2 minutes.

Step 6

Add onion, tomatoes, mixed colored capsicums and toss well.

Step 7

Add cottage cheese strips and mix gently. Cook till the cottage cheese strips are slightly crisp on the outside, mixing gently occasionally.

Step 8

Add butter and sprinkle dried fenugreek leaves powder. Mix gently and take the pan off the heat.

Step 9

Transfer the prepared mixture into a serving bowl, garnish with coriander sprig and serve hot.
