Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Salsa Chicken Casserole Recipe

  • Mozzarella cheese grated to sprinkle

  • Salsa Chicken

  • Boneless chicken cut into 1 inch pieces 250 grams

  • Tomatoes chopped 2-3 medium

  • Oil ½ tablespoon

  • Green chillies finely chopped 1-2

  • Onion chopped 1 medium

  • Fresh coriander leaves chopped 1 tablespoon

  • Salt to taste

  • Juice of ½ lemon

  • Herbed rice

  • Cooked rice 1½ cups

  • Fresh coriander leaves chopped 1 tablespoon

  • Butter 1 tablespoon

  • Garlic chopped 1 tablespoon

  • Salt to taste

  • Red chilli flakes ½ teaspoon

Method

Step 1

To make herbed rice, heat butter in a non-stick pan. Add garlic and sauté for 30 seconds.

Step 2

Add chilli flakes and coriander leaves, mix well and sauté for 1 minute.

Step 3

Add rice and mix well. Add salt and mix well. Remove from heat and set aside.

Step 4

Preheat oven to 180º C.

Step 5

To make salsa chicken, heat oil in another non-stick pan. Add green chillies and sauté for 5 seconds. Add onion, mix and sauté for 30 seconds.

Step 6

Add tomatoes, coriander leaves and salt, mix well and cook for 1 minute.

Step 7

Add chicken, mix and cook till it is fully done. Add lemon juice and mix. Remove from heat and set aside.

Step 8

Spread herbed rice in an oval glass baking dish and top with the salsa chicken. Sprinkle cheese on top, place the dish in the preheated oven and bake till the cheese melts.

Step 9

Serve hot.
