By Sanjeev Kapoor 12 Jan 2016 in Recipes Course New Update Main Ingredients Chicken Breasts, Rice Cuisine Mexican Course Snacks and Starters Prep Time 26-30 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Non Veg Ingredients list for Santa Fe Chicken 4 Chicken Breasts 1 cup Rice (long grain) 1 large Onion chopped 2-3 Jalapeno chopped 2 cloves Garlic chopped 2 cups Chicken stock 2 large Tomatoes chopped 1 tablespoon Olive oil a pinch Saffron (kesar) to taste Salt 1/4 teaspoon Black pepper powder 1 teaspoon Paprika 1/2 cup Cheddar cheese grated 1 tablespoons Fresh coriander leaves chopped Method Heat oil in a large skillet and sauté the onion, jalapenos and garlic till onions are translucent . Add stock and tomatoes and bring to a boil. Stir in rice and saffron and mix. Sprinkle salt, pepper powder and paprika flakes on the chicken and place over the rice mixture. Cover and simmer for twenty minutes or until the chicken is cooked. Remove from the heat. Sprinkle cheese, cover and let stand for five minutes. Garnish with coriander leaves and serve hot.
