Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Tamatar Bhujia Recipe

  • Tomatoes 8 large

  • Onion

  • Onion 1 large

  • Garlic 5 cloves

  • Ginger 1 inch piece

  • Green chillies 2

  • Fresh coriander leaves a few sprigs

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Salt to taste

  • Garam masala powder 1 teaspoon

  • Brown sugar 2 1/2 teaspoons

  • Coconut scraped 1 tablespoon

Method

Step 1

Wash and wipe dry tomatoes. Place in hot boiling water for five minutes. Drain, cool and peel off skin. Chop into one inch sized chunks.

Step 2

Peel, wash and finely chop onion and garlic. Peel, wash and shred ginger. Remove stems, deseed and cut green chillies into thin strips. Clean, wash and chop coriander leaves Heat oil in a saucepan and add cumin seeds.

Step 3

When they begin to change colour, add onion and garlic and sauté till onion is soft. Add green chillies and stir. Add ginger and tomatoes.

Step 4

Stir and add salt, garam masala powder and stir-fry for two to three minutes.

Step 5

Add brown sugar, scraped coconut and chopped coriander leaves. Serve hot.
