How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Telangana Avakaya Annam Recipe

  • Basmati rice cooked 1 cup

  • Mango Pickle 2 teaspoons

  • Ghee 2 teaspoons

  • Mustard seeds 1/4 teaspoon

  • Cumin seeds 1/4 teaspoon

  • Curry leaves 7-8

  • Onion 3/4 cup

  • Ginger-garlic paste 1 teaspoon

  • Turmeric powder 1 teaspoon

  • Split black gram skinless (dhuli urad dal) 1/4 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Mix cooked rice and avakaya pickle in a bowl and keep it aside.

Step 2

Heat ghee in a non stick pan add curry leaves, mustard seeds and cumin seeds, when it starts spluttering add onions and saute till light brown.

Step 3

Add ginger-garlic paste, turmeric powder and saute for a minute.Add split skinless green grams and saute till light brown.

Step 4

Add rice and salt and saute for a minute.Serve hot garnish with chopped coriander leaves.
