Tomato Mozzarella And Olive Salad

A filling salad of tomatoes, slices of mozzarella cheese spiced up with olives and Italian dressing. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 medium tomatoes, thickly sliced
  • 75 grams mozzarella cheese, thickly sliced
  • A few fresh basil leaves
  • 6 black olives, deseeded
  • 6 green olives, stuffed
  • 3 garlic cloves, crushed
  • 1 teaspoon black peppercorns
  • Salt to taste
  • 2 teaspoon extra-virgin olive oil
  • 1 teaspoon lemon juice

Method

  1. Arrange alternate slices of tomatoes and mozzarella cheese in a platter. Arrange the basil leaves between the tomato and cheese slices. Keep the rest in the centre. Add black and green olives to the platter.
  2. Mix crushed garlic, crushed peppercorns, salt, olive oil and lemon juice to it. Mix well. Pour dressing over the salad and serve cold.
