Ingredients list for Vegetable Lasagna

  • 6 Lasagna Sheets
  • to taste White Sauce
  • 1 1/2 cups White sauce
  • 1/2 cup Processed cheese grated
  • 1/4 cup Parmesan cheese powdered
  • 2 tablespoons Oil
  • 1 tablespoon Butter
  • 6 cloves Garlic crushed
  • 1 medium Onion chopped
  • 4-5 Button mushrooms sliced
  • 1 medium Brinjal sliced
  • 1 medium Zucchini sliced
  • 3 medium Tomatoes blanched and chopped
  • 1 medium Green capsicum sliced
  • 1/4 teaspoon Dry Basil
  • 3 tablespoons Fresh parsley chopped

Method

  1. Heat plenty of water in a deep pan. Add salt and add the lasagna sheets. Heat oil and butter in another pan. Add garlic, onions and sauté, Add mushrooms, brinjal, zucchini, salt and mix. Add tomatoes and cook for two minutes. Add capsicum, dried basil, parsley and mix. Preheat the oven to 200C.
  2. Take a baking dish and spread a thin layer of white sauce. Over that spread a layer of vegetables followed by a layer of lasagne sheets. Repeat the layers twice more. Pour the remaining white sauce on top and spread evenly. Spread a layer of grated cheese and powdered Parmesan cheese.
  3. Bake in the preheated oven for at 200?C for about twenty minutes until the cheese has turned golden. Serve hot.
