Andhra Mashed Brinjal Small brinjals cooked in Andhra spices and mashed This recipe is from FoodFood TV channel By Sanjeev Kapoor 04 Nov 2015 in Recipes Course New Update Main Ingredients Small brinjals, Tamarind pulp Cuisine Andhra Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Veg Ingredients list for Andhra Mashed Brinjal 8-10 Small brinjals 2 teaspoons Tamarind pulp 1/2 teaspoon Mustard seeds 2 medium Onions chopped 1 teaspoons Ginger chopped 2 teaspoons Garlic chopped to taste Salt 2-3 Green chillies slit 1/4 teaspoon Turmeric powder 1 1/2 teaspoons Red chilli powder 1/2 teaspoon Cumin seeds 7-8 Dried red chillies (bor mirchi) 15 Curry leaves 3 tablespoons Oil Method Quarter brinjals and keep them soaked in water. Heat 2 tbsps oil in a non stick pan, add mustard seeds and let them splutter. Add onions, ginger and garlic and sauté till soft. Add brinjals, salt, green chillies, turmeric powder and mix well. Cover and cook on high heat for 3-4 minutes. Add red chilli powder and mix well. Add ½ cup water and mix. Cover and cook on medium heat till brinjals become tender. For the tempering, heat 1 tbsp oil in another non stick pan, add cumin seeds, red chillies and curry leaves and sauté till fragrant. Add tamarind pulp to the brinjals and mix. Mash everything with the back of the ladle Add the tempering and cover immediately to trap the flavours. Serve hot.
