Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Badami Tangdi Recipe

  • Chicken Drumsticks 4

  • Almonds , ground into paste 8-10

  • Ginger-garlic paste 1 tablespoon

  • Green chilli paste 1 teaspoon

  • Crushed black peppercorns 1/2 teaspoon

  • Salt to taste

  • Juice of 1 lemon

  • Mustard oil 5 tablespoons

  • Gram flour (besan) 1 1/2 tablespoons

  • Turmeric powder 1/4 teaspoon

  • Hung yogurt 1 tablespoon

  • Garam masala powder 1 teaspoon

  • Lemon rind grated 1/2 teaspoon

  • White pepper powder 1/4 teaspoon

  • Salt to taste

Method

Step 1

Make light incisions on the chicken drumsticks and place them in a bowl. Add ginger-garlic paste, green chilli paste, crushed black peppercorns, salt, lemon juice and rub onto the chicken drumsticks. Keep aside for 20-25 minutes to marinate.

Step 2

For the second marinade, heat 2 tbsps mustard oil in a non-stick pan. Add gram flour and sauté for 3-4 minutes stirring continuously. Transfer into a bowl, add turmeric powder, almond paste, hung yogurt and mix well.

Step 3

Add garam masala powder, lemon rind, white pepper powder, remaining mustard oil, salt and mix well. Add the marinated chicken pieces and coat them well with the second marinade. Keep aside for 20 minutes.

Step 4

Grease the basket of the air fryer with a little oil. Place the marinated chicken pieces in it and fit it to fryer. Spread the remaining marinade on the chicken drumsticks and cook at 180° C for 14 minutes.

Step 5

Transfer onto a serving plate and serve hot.
