Chicken Hong Kong

Boneless chicken that is fried to perfection and then tossed in a Hong Kong style sauce is a perfect dish for when you have guests over. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Chicken Hong Kong

  • 400 grams Boneless chicken breast cut into cubes
  • 1 tablespoon Oil + to deep fry
  • Salt to taste
  • Black pepper powder to taste
  • 3 teaspoon Cornflour/ corn starch
  • 1 Egg
  • 2 Spring onions with greens
  • 2-3 Dried red chillies
  • 1 inch Ginger sliced
  • 1 tablespoon Garlic chopped
  • 1 tablespoon Red chilli paste
  • 1 tablespoon Red chilli sauce
  • 1 tablespoon Soy sauce
  • ¼ cup + 1 tablespoon Chicken stock 
  • 1 teaspoon Sugar
  • 1 teaspoon Vinegar

Method

  1. Heat sufficient oil in a deep pan.
  2. Place chicken in a bowl, add salt, pepper powder and 2 teaspoons cornstarch.
  3. Break an egg into another bowl and whisk well. Add half egg to the chicken mixture and mix well.
  4. Slide the chicken cubes into hot oil and deep-fry chicken till golden and crisp. Drain on absorbent paper.
  5. Halve spring onion bulbs,reserving greens,and separate layers. Diagonally slice dried red chillies and discard seeds.
  6. To prepare sauce, heat 1 tablespoon oil in a non-stick pan. Add ginger and saute for 30 seconds. Add garlic, mix and saute on high heat.
  7. Add sliced dried red chillies, red chilli paste, red chilli sauce, soy sauce, ¼ cup chicken stock and spring onion bulbs, mix well and saute for a minute.
  8. Add fried chicken, salt, pepper powder, sugar and vinegar and toss to mix.
  9. Mix remaining cornstarch in 1 tablespoon chicken stock, add to the sauce, mix and cook on low heat for a minute.
  10. Roughly chop spring onion greens, add to sauce reserving some for garnishing and mix well.
  11. Serve hot garnished with chopped spring onion greens.
