Ingredients list for Egg Bhujne
- 4 Eggs
 - 2 tablespoons Tomatoes
 - 1 tablespoon Crushed garlic
 - 1 teaspoon Green chillies finely chopped
 - 2 medium Onions finely chopped
 - 1 medium Tomato finely chopped
 - 1 medium Green capsicum finely chopped
 - 1 teaspoon Red chilli powder
 - 1/2 teaspoon Turmeric powder
 - 2 tablespoons Fresh coriander leaves chopped
 - to taste Salt
 
Method
- Heat oil in a non-stick pan, add garlic and green chillies and sauté till garlic turns pink.
 - Add onions and sauté till they turn translucent. Add tomato and capsicum, mix and cook till the tomato turns pulpy.
 - Add red chilli powder, turmeric powder, one tablespoon coriander leaves and salt. Mix well and cook on low heat for a minute. Add little water, mix and cook for a minute.
 - Break the eggs, one by one, into the pan, cover and cook on low heat for two minutes.
 - Serve hot garnished with remaining coriander leaves.
