Ingredients list for Khichda- Sk Khazana

  • 500 grams Boneless mutton cut into small pieces
  • 2 1/2 tablespoons Ghee
  • 1 1/2 teaspoons Caraway seeds (shahi jeera)
  • 4-5 Green cardamoms
  • 1 Black cardamom
  • 4-5 Cloves
  • 7-8 Black peppercorns
  • 1 Bay leaf
  • 1 inch stick Cinnamon
  • 2 medium Onion finely chopped
  • 2 tablespoons Ginger-garlic-green chilli paste
  • 1 1/2 teaspoons Red chilli powder
  • 1/2 teaspoon Turmeric powder
  • 1 1/2 teaspoons Cumin powder
  • 1 1/2 teaspoons Coriander powder
  • 1/2 cup Yogurt
  • 1/2 cup Whole wheat soaked overnight and drained
  • 1/2 cup Barley (jau), soaked overnight and drained
  • 1/2 cup Broken wheat (dalia/lapsi) soaked overnight and drained
  • 1/4 cup Split skinless green gram (Moong dal) soaked and drained
  • 1/4 cup Split red lentil (dhuli masoor dal) soaked and drained
  • 1/4 cup Split pigeon pea (dhuli tuvar dal) soaked and drained
  • 1/4 cup Split Bengal gram (chana dal) soaked and drained
  • 1/4 cup Split skinless black gram (dhuli urad dal) soaked and drained
  • to taste Salt
  • for garnish Fried onions 1-2 tablespoons +
  • 1 teaspoon Garam masala powder
  • 1 tablespoon Fresh coriander leaves chopped
  • for garnish Fresh mint leaves chopped 1 tablespoon +
  • red chilli oil for drizzling

Method

  1. Heat a handi. Finely chop onions. Add ghee to the handi and when it melts, add caraway seeds, green cardamoms, black cardamom, cloves, black peppercorns, bay leaf and cinnamon stick, mix well and sauté till fragrant.
  2. Add onion and sauté till it turns golden brown. Add ginger-garlic-green chilli paste and sauté well.
  3. Add red chilli powder, turmeric powder, cumin powder and coriander powder and mix well. Add 2-3 tbsps water, mix well and sauté for 2 minutes.
  4. Add yogurt, mix well and saute on low heat for 1 minute. Add mutton and mix well.
  5. Add whole wheat, jau, broken wheat, split skinless green gram, split red lentils, split pigeon peas, split Bengal gram and split skinless black gram and mix well.
  6. Add salt and crushed fried onions and mix well for 2-3 minutes. Add 5-6 cups water and mix well. cook on low heat for 1-1.5 hours, stirring occasionally.
  7. Remove the cooked mutton pieces from the khichda and into a bowl. Blend the mixture with a electric hand blender to a coarse paste.
  8. Add the cooked mutton pieces and mix. Add garam masala powder and coriander leaves and mint leaves.
  9. Transfer into serving bowls, garnish each bowl with fried onions, drizzle chilli oil and garnish with a mint sprig and a lemon wedge. Serve hot.
