Ingredients list for Navratan Pulao - SK Khazana

  • 1 1/2 cups Long grain rice washed and soaked for 30 minutes
  • 1 Medium potato cut into small cubes
  • 1/2 cup Cottage cheese (paneer) cubes
  • 1/2 cup Carrot cubes
  • 1/2 cup Cauliflower cut into small florets
  • 1/2 cup Mushrooms sliced
  • 1/4 cup Soya granules soaked
  • 1/2 cup Corn kernels boiled
  • 1/2 cup French beans cut into strips
  • 1/2 cup Green peas blanched
  • 3 tablespoons Ghee
  • 10-12 Cashewnuts
  • 8-10 Almonds
  • 15-18 Raisins
  • 3-4 Cloves
  • 5-6 Black peppers
  • 2-3 Green cardamoms
  • 2 teaspoons Caraway seeds (shahi jeera)
  • to taste Salt

Method

  1. Heat ghee in a deep non-stick dish pan, cashewnuts, almonds and raisins and shallow-fry for 2-3 minutes. Drain into a bowl.
  2. Add cloves, peppercorns, green cardamom, caraway seeds, potato and cottage cheese and sauté till light brown.
  3. Add carrot, cauliflower, mushrooms, soya granules, corn kernels, French beans and green peas, mix and sauté for 2-3 minutes.
  4. Add rice, salt and 3½ cups water and mix well. Add the fried nuts, mix well, cover and cook till done.
  5. Transfer into a serving bowl and serve hot.
