Paneer Do Pyaza

Ingredients 

  • 500 grams cottage cheese
  • 4 medium onions
  • 4 tablespoons oil
  • 1 tablespoon cumin seeds
  • 5 green cardamoms, crushed
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 2 medium tomatoes, chopped
  • 1/4 cup tomato puree
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons coriander powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chilli powder
  • 1/4 cup fresh cream
  • Salt to taste
  • 1 teaspoon garam masala powder
  • 1/2 cup fried onions
  • 1 inch ginger piece ,cut into juliennes
  • 1/4 cup chopped fresh coriander leaves 

Method

  1. Heat a deep non-stick pan and add 2 tablespoons oil.
  2. Halve 2 onions. Cut further into halves and open out the layers.
  3. Heat 2 tablespoons oil in another non-stick pan and add these big onion pieces to it.
  4. Add cumin seeds, green cardamoms and 2 sliced onions to the oil in the deep pan.
  5. Sauté till onions turn golden. Cut paneer into 2 inch triangles. Sauté and toss the big onion layers till golden and take off the heat.
  6. Add garlic paste and ginger paste to onions in the deep pan. Sauté and add 2 tablespoons water. Mix well.
  7. Add tomatoes and tomato puree and mix. Add turmeric powder, coriander powder, cumin powder and red chilli powder. Mix well and cook till oil separates.
  8. Add paneer triangles and mix well with the masala. Add cream and mix well.Add salt and mix again.
  9. Add garam masala powder, the big browned onion pieces and ½ cup fried onions.
  10. Add ginger juliennes and coriander leaves. Mix everything together lightly. Serve immediately.
