Simple Prawn Pulao

This prawn pulao may be simple but its taste is in no way simple.The basic pulao is a one pot dish in which the spices are tempered first and then the veggies, prawns and rice are cooked together along with the rice. Prawn Pulao is a lightly spiced, aromatic preparation of rice and fresh prawns This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Simple Prawn Pulao

  • 16-20 Prawns (medium) shelled and deveined
  • 1 1/2 cups Rice soaked for 15-20 minutes
  • 2-3 tablespoons Oil
  • 2-3 Cloves
  • 2 Bay leaves
  • 1 inch Cinnamon
  • 5-6 Black peppercorns
  • 2-3 Green cardamoms
  • 1 medium Onion chopped
  • to taste Salt
  • 1 teaspoon Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Garam masala powder
  • 1 tablespoon Fresh coriander leaves chopped
  • 1/2 cup Coconut milk

Method

  1. Heat oil in a non-stick pan. Add cloves, bay leaves, cinnamon, peppercorns, green cardamoms and sauté for a minute.
  2. Add onion and mix well. Add salt, mix and sauté till onion turns golden.
  3. Add prawns, chilli powder, turmeric powder, garam masalapowder and chopped coriander and mix well.
  4. Add rice and salt, mix well. And 2 cups water and coconut milk and mix well.Cover and cook till prawns and rice are completely done.
  5. Serve hot.
