Ingredients list for South Indian Fried Chicken

  • 2 Boneless chicken breasts ,cut into cubes
  • ¼ cup Semolina (suji)
  • to taste Salt
  • 1 teaspoon Coriander powder
  • ¼ teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1½ tablespoons Crushed black peppercorns
  • Juice of 1 lemon
  • 1 tablespoon Ginger-garlic paste
  • 15-18 Curry leaves
  • 3 tablespoons Rice flour
  • for deep-frying Oil
  • 1 tablespoon Coconut oil
  • 1 teaspoon Mustard seeds
  • 3-4 Green chillies ,slit
  • 1 tablespoon Fresh coriander leaves chopped

Method

  1. Combine chicken pieces, salt, coriander powder, turmeric powder, red chilli powder, 1 tablespoon crushed peppercorns, half the lemon juice and ginger-garlic paste in a bowl. Finely chop 8-10 curry leaves and add to the mixture and mix well. Set aside to marinate for 15 minutes.
  2. Mix together rice flour, semolina and salt in another bowl. Coat the marinated chicken pieces with this mixture.
  3. Heat sufficient oil in a kadai. Deep-fry chicken pieces till golden and crisp. Drain on an absorbent paper.
  4. Heat coconut oil in a non-stick pan. Add mustard seeds and let them splutter. Add green chillies and mix. Add the remaining chopped and whole curry leaves, remaining crushed peppercorns, little water and mix well.
  5. Add fried chicken, salt and toss. Add the remaining lemon juice and coriander leaves. Serve hot.
