Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Sweet and Sour Prawns Recipe

  • Prawns (medium) shelled and deveined with tails intact 8-10

  • Tomato ketchup ¾ cup

  • Salt to taste

  • Crushed white peppercorns to taste

  • Red chilli paste 1½ teaspoons

  • Oil 1 tablespoon + to shallow fry

  • Cornflour/ corn starch 1 tablespoon

  • Garlic chopped 1 tablespoon

  • Ginger chopped 1 tablespoon

  • Celery chopped ½ teaspoon

  • Spring onion bulbs halved 4-5

  • Green capsicum cut into small triangles 1 medium

  • Vinegar 2½ teaspoons

  • Spring onion greens chopped, 2 tablespoons + for garnishing

Method

Step 1

Put prawns with salt, crushed peppercorns and ½ teaspoon red chilli paste in a bowl, mix and set aside to marinate for 10-15 minutes.

Step 2

Heat sufficient oil in a non-stick pan to shallow-fry.

Step 3

Add cornflour to marinated prawns and mix well. Shallow-fry the prawns in hot oil till golden.

Step 4

Heat 1 tablespoon oil in another non-stick wok. Add garlic, ginger and celery and sauté well.

Step 5

Add remaining red chilli paste and mix well. Add spring onion bulbs and capsicum and sauté.

Step 6

Add ¼ cup water, salt, crushed peppercorns and tomato ketchup, mix well and cook till the sauce thickens.

Step 7

Add fried prawns, mix well. Add vinegar, mix well and cook for 2 minutes.

Step 8

Switch off heat, add 2 tablespoons spring onion greens and mix well.

Step 9

Serve hot garnished with spring onion greens.
