Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Takatak Masala Dosa Recipe

  • Dosa batter 4 cups

  • Potato bhaji 1 1/2 cups

  • Onions chopped 2 large

  • Tomatoes chopped 2 large

  • Red chilli powder 1 teaspoon

  • Chaat masala 1 1/2 teaspoons

  • Oil to shallow fry

  • Butter 4 tablespoons

  • FOR CHUTNEY

  • Roasted chana dal (dalia) 1/2 cup

  • Garlic 7-8 cloves

  • Whole dry red chillies 5-6

  • Lemon juice 1 tablespoon

  • Salt to taste

  • Roasted cumin powder 1/2 teaspoon

Method

Step 1

Grind all the ingredients of the red chutney.

Step 2

Heat and season a dosa tawa. Place a small ladleful of dosa batter on the tawa and spread evenly to make a small sized dosa. Drizzle half a teaspoon of oil around the dosa and cook on low heat for half a minute.

Step 3

Spread red chutney all over the dosa. Sprinkle some onions, tomatoes, red chilli powder and chaat masala. Over these place some potato bhaji.

Step 4

Press everything gently till everything is lightly mashed. Spread it all over the dosa.

Step 5

Gently fold over one side and drizzle some oil all around so that the underside turns golden and crisp. Flip over and fry till the other side too turns golden and crisp.

Step 6

Cut into triangular pieces and serve hot.
