Agri Mutton Rassa

Agri food is known for its spices and heat and this recipe is exactly that! Mutton curry loaded with flavours and aroma. A perfect combination with rice or bhakri.

Ingredients

  • 750 grams mutton, cut into 2 inch pieces on the bone
  • 4 tablespoons oil
  • 10-12 garlic cloves
  • 1 inch ginger piece, roughly chopped
  • 3-4 green chillies
  • 1 cup grated dried coconut
  • 1 cup fresh coriander leaves
  • 8-10 black peppercorns
  • 3-4 green cardamoms
  • 1 black cardamom
  • 1 inch cinnamon 
  • 2 bay leaves
  • 3 medium onions, sliced
  • Salt to taste
  • 2 medium tomatoes, chopped
  • 1 teaspoon turmeric powder
  • 1½ tablespoons agri koli masala
  • 2 medium potatoes, quartered without peeling
  • 2-3 tablespoons chopped fresh coriander leaves
  • ½ lemon 
  • Fresh coriander sprig for garnish
  • Bhakri for serving

Method

  1. Heat 2 tablespoons oil in a pan, add garlic, ginger and green chillies, mix and sauté for 30 seconds.
  2. Add dried coconut, mix and sauté till golden brown. Add coriander leaves, mix and sauté for 2 minutes. Allow to cool slightly.
  3. Transfer into a blender jar, add 1 cup water and grind to fine paste.
  4. Heat remaining oil in the same pan, add black peppercorns, green cardamoms, black cardamom, cinnamon and bay leaves and sauté till fragrant.
  5. Add onions and salt, mix and sauté till the onions turn golden brown.
  6. Add tomatoes and sauté for 2 minutes on medium heat.
  7. Add mutton, mix and sear on high heat for 2-3 minutes.
  8. Add turmeric powder and agri koli masala and mix well. 
  9. Add potatoes and mix well. Add 1 cup water and mix well.
  10. Add the ground paste and mix well. Rinse the blender jar with 1½ cups water and add. Mix well, cover and cook on medium heat for 25-30 minutes.
  11. Add coriander leaves. Squeeze the juice of ½ lemon and mix well.
  12. Transfer into a serving bowl, garnish with coriander sprig and serve hot with bhakri.
