Jackfruit Thoran A popular side dish from Kerala, made with raw jackfruit which is loaded with healthy fibers. Boiled and mashed jackfruit is tempered in coconut oil with madras onions and garlic and served hot garnished with coconut in authentic style. By Sanjeev Kapoor 11 Nov 2024 in Recipes Main Course Vegetarian New Update Main ingredients Raw jackfruit, Scraped fresh coconut, Green chillies, Cumin seeds, Coconut oil, Mustard seeds, Split skinless black gram, Garlic, Madras onions, Dried red chillies, Curry leaves, Crushed black peppercorns Cuisine Kerala Course Main course vegetarian Prep time 25-30 minutes Cook time 20-25 minutes Serve 4 Taste Savoury Level of cooking Easy Others Vegetarian Ingredients 750 grams raw jackfruit, peeled and cut into 2 inch pieces 1 cup scraped fresh coconut + for garnish Salt to taste ½ teaspoon turmeric powder 2-3 green chillies 1 teaspoon cumin seeds 2 tablespoons coconut oil 1 teaspoon mustard seeds 1 tablespoon split skinless black gram (duli urad dal) 10-12 garlic cloves, vertically sliced 1 cup sliced madras onions 2-4 dried red chillies 15-20 curry leaves ¼ teaspoon crushed black peppercorns Method Put raw jackfruit pieces in a pressure cooker, add 3 cups water, salt and turmeric powder. Cover the cooker and cook under pressure for 3-4 whistles. Put green chillies, cumin seeds and coconut in a mixer jar and grind to a coarse mixture. Open the cooker once the pressure has reduced completely. Drain the mixture and transfer the cooked raw jackfruit into another bowl and mash lightly. Heat coconut oil in an earthen pot, add mustard seeds and let them splutter. Add split skinless black gram and garlic, mix well and saute for 1-2 minutes. Add madras onion and mix. Add dried red chillies and curry leaves and mix well. Saute till the onions turn translucent. Add the mashed jackfruit and mix well. Add the ground mixture and mix well. Cook for 2-3 minutes. Adjust salt and add crushed black peppercorn and mix well.
