Sarson Chole Ka Saag

Ingredients

  • 1 large bunch of sarson leaves
  • 1½ boiled chickpeas (chole) 
  • 3-4 tablespoons ghee
  • 1 tablespoon finely chopped ginger
  • 1 tablespoon finely chopped garlic
  • 1 medium onion, finely chopped
  • 2-3 green chillies, chopped
  • 20-25 spinach leaves
  • Salt to taste
  • ½ teaspoon garam masala powder
  • White butter cubes for garnish

Method

  1. Heat ghee in a non-stick deep pan, add ginger and garlic, mix and sauté for 1 minute. Add onion, mix well and saute till translucent. 
  2. Add green chillies and mix well. Add sarson leaves, mix and cook till the leaves wilt. 
  3. Add spinach leaves, mix and cook for 1 minute. Cover and cook for 5-6 minutes. 
  4. Switch the heat off and blend the mixture till smooth with an electric hand blender.
  5. Switch the heat on, add boiled chickpeas, mix well and cook for 1-2 minutes.
  6. Add garam masala powder and adjust salt and mix well. Cook for 1 minute.
  7. Transfer into a serving bowl, garnish with white butter cubes and serve hot.
