The capital city of Himachal Pradesh in India, Shimla has many farms of capsicum. Hence, the Hindi name. Besides this, though not loved by all, this veggie is the most essential whenever you plan to dish-up an Indo-Chinese recipe. Stuff them up with cheese, beans, other veggies or meats or just make a simple sabzi, it will surely add that exciting crisp to your creations!

Ingredients for Capsicum And Cucumber Salad Recipe

  • Green capsicum cut into 1/2 inch pieces 1 medium

  • Cucumbers cut into 1-inch cubes peeled 2 medium

  • Pita bread cut into triangles 1

  • Tomato cut into ½ inch cubes 1 medium

  • Iceberg lettuce torn 1 cup

  • Fresh parsley finely chopped 1/4 cup

  • Fresh mint leaves chopped 1/4 cup

  • Dressing

  • Olive oil 2 tablespoons

  • Lemon juice 2 tablespoons

  • Salt to taste

  • Black pepper powder 1 teaspoon

  • Garlic chopped 1 tablespoon

  • Oregano 1/2 teaspoon

Method

Step 1

Heat a non-stick tawa, place the pita bread triangles on it and toast till golden brown and crisp. Break into small pieces and set aside.

Step 2

To make the dressing, combine the olive oil, lemon juice, salt, black pepper powder, garlic and oregano in a deep bowl. Mix well.

Step 3

Put the cucumber, capsicum, tomato, lettuce, parsley and mint leaves into another bowl and mix well.

Step 4

Add the dressing and toss to mix. Chill in the refrigerator.

Step 5

Add the bread pieces and mix well. Serve immediately.
