Ingredients list for Chicken Stuffed Tomatoes
- 1 cup Chicken mince
 - 4 large Tomatoes
 - 2 teaspoons Red chilli powder
 - to taste Salt
 - 1 Green chilli
 - 1 tablespoon Butter
 - 7-8 Black peppercorns
 - 3-4 Cloves
 - 1 inch Cinnamon
 - 2 Green cardamoms
 - 1 Bay leaf
 - 2 medium Onions finely chopped
 - 2 teaspoons Ginger-garlic paste
 - 1 tablespoon Cashewnut paste
 - ¼ cup Fresh cream
 - for garnishing Fresh coriander leaves chopped
 
Method
- Combine chicken mince, 1 teaspoon red chilli powder, salt and finely chopped green chilli in a bowl and mix well.
 - Cut top and bottom parts of the tomatoes. Scoop out the pulp using a spoon to make tomato cups. Finely chop the pulp.
 - Heat butter in a non-stick pan. Add peppercorns, cloves, cinnamon, cardamoms and bay leaf and sauté till the butter turns brown.
 - Add onions, mix and sauté for 2 minutes. Add chopped tomato pulp, mix and sauté for 2-3 minutes.
 - Add ginger-garlic paste, mix well and sauté for 2-3 minutes. Add remaining red chilli powder, mix well and sauté for 2-3 minutes.
 - Stuff the tomato cups with the chicken mince mixture.
 - Add ½ cup water to the pan and stir to mix. Place the stuffed tomatoes in it, cover and cook on low heat for 10-15 minutes or till the chicken is fully cooked.
 - Remove stuffed tomatoes and place in a serving bowl.
 - Discard cinnamon and bay leaf from the pan and add cashewnut paste. Mix well.
 - Add ½ cup water and stir to mix. Add salt, mix well and cook for 2-3 minutes. Lower heat, add cream and mix well. Switch off heat.
 - Pour gravy over the stuffed tomatoes, garnish with chopped coriander and serve immediately.
