Ingredients list for Chilli Chicken - SK Khazana

  • 250 grams Boneless chicken cut into 1 inch cubes
  • 1-2 Green chillies finely chopped
  • 1-2 Green chillies slit
  • to taste Salt
  • to taste Black pepper powder
  • 1 Egg
  • 1 tablespoon Cornflour
  • 1 1/2 tablespoons Refined flour (maida)
  • 1 tablespo to deep fry Oil
  • 4-5 cloves Garlic finely chopped
  • 1 Medium onion cut into cubes and layers separated
  • 1 Medium green capsicum cut into square pieces
  • 1/2 cup Chicken stock
  • 2 tablespoon Soy sauce
  • 1 1/2 tablespoons Cornflour slurry
  • 1 tablespoon Red chilli sauce
  • 1 teaspoon Vinegar
  • 1 stalks Spring onion greens diagonally sliced

Method

  1. Take chicken cubes in a bowl, add salt, pepper powder, egg, 1 tablespoon cornflour and refined flour and mix.
  2. Heat sufficient oil in a kadai. Gently slide in the chicken cubes and deep-fry till crisp. Drain on absorbent paper.
  3. To make the sauce, heat 1 tablespoon oil in a non-stick pan. Add garlic, chopped green chillies, slit green chilles, onion, capsicum and salt, mix and sauté for a few seconds.
  4. Add chicken stock, soy sauce and fried chicken pieces, mix well and bring to a boil.
  5. Mix together remaining cornflour and remaining stock in a bowl to make slurry. Add this to the sauce, mix and cook till the sauce thickens.
  6. Add chilli sauce and vinegar and mix well.
  7. Transfer into a serving dish, garnish with spring onion greens and serve hot.
