Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Falafel Balls Recipe

  • Chickpeas , soaked overnight and drained 1 cup

  • Oil to deep fry

  • Garlic 6-8 cloves

  • Onions , roughly chopped 2 medium

  • Fresh coriander sprigs 1/2 cup

  • Fresh parsley sprigs 2-3

  • Olive oil 1 tablespoon

  • Cumin powder 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Black pepper powder to taste

  • Baking soda 1/2 teaspoon

  • Salt to taste


Step 1

Put chickpeas into a food processor, add garlic, onion, coriander sprigs, parsley sprigs, olive oil, cumin powder, red chilli powder, black pepper powder, baking soda and salt and blend into a coarse mixture.

Step 2

Heat sufficient oil in a kadai.

Step 3

Transfer the mixture into a large bowl. Divide the falafel mixture into medium sized portions and shape them into balls. Gently slide these balls into hot oil and deep fry till golden brown and crisp. Drain on absorbent paper.

Step 4

Transfer the balls into a serving bowl and serve hot with tomato ketchup.
