Fiery Pepper Chicken

Ingredients

  • 250 grams boneless chicken, cut into cubes
  • 2 dried red chillies, chopped
  • ¾ teaspoon crushed black peppercorns
  • 2 tablespoons sesame oil
  • Salt to taste
  • 1½ tablespoons chopped garlic
  • 2 teaspoons chopped ginger
  • 1 spring onion, chopped
  • 2 teaspoons dark soy sauce
  • 2 teaspoons light soy sauce
  • ½ teaspoon sugar
  • 3 tablespoons corn flour slurry
  • 1 teaspoon vinegar
  • Chopped spring onion greens for garnish

Method

  1. Heat 1 tablespoon sesame oil in a non-stick wok, add chicken , salt, crushed black peppercorns, and sauté on high heat for 2-3 minutes. Take it off the heat and transfer into a bowl. Set aside.
  2. Heat remaining sesame oil in the same pan; add garlic, ginger, sauté till the raw flavor goes away.
  3. Add dried red chillies, spring onion and sauté well. Add the chicken and mix well. Sauté and cook for 2 minutes.
  4. Add dark soy sauce, light soy sauce, sugar, and mix well. Cook for 1 minute.
  5. Add corn flour slurry and mix well. Cook till thickens and switch the heat off, add vinegar and mix well.
  6. Garnish with chopped spring onion greens and serve hot.
