Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Gujarati Kadhi - SK Khazana Recipe

  • Yogurt 1 1/2 cups

  • Gram flour 1 tablespoon

  • Ginger-green chilli paste 1 teaspoon

  • Salt to taste

  • Ghee 1 tablespoon

  • Mustard seeds 1/2 teaspoon

  • Cumin seeds 1/2 teaspoon

  • Asafoetida 1/4 teaspoon

  • Cloves 3

  • Cinnamon 1 inch sti

  • Curry leaves 5

  • Round red chillies 4

  • Sugar 1 teaspoon

  • Fresh coriander leaves chopped 1 tablespoon

Method

Step 1

Take yogurt in a bowl, add gram flour, ginger-green chilli paste and salt and whisk well. Add 3½ cups water and whisk again till you get a smooth mixture.

Step 2

Heat ghee in a non-stick deep pan, add mustard seeds and let them splutter. Add cumin seeds and let them change colour. Add asafoetida, cloves, cinnamon, curry leaves and round red chillies, mix and sauté for a minute on medium heat.

Step 3

Add the yogurt mixture and mix well. Cook on medium heat for 2-3 minutes. Add sufficient water, sugar and coriander leaves and mix. Cook on medium heat for 4-5 minutes.

Step 4

Transfer into a serving bowl and serve hot.
