Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mast Mushroom Recipe

  • Mushrooms cut into 1/2 inch pieces 400 grams

  • Cottage Cheese 3 tablespoons

  • Black peppercorns 5

  • Clove 5

  • Green cardamoms 1

  • Cinnamon 1 Stick

  • Ginger grated 2 pieces

  • Garlic finely chopped 6 cloves

  • Onion finely chopped 2 medium

  • Tomato finely chopped 1 medium

  • Green chilli finely chopped 2

  • Salt to taste

  • Coriander powder 2 teaspoon

  • Turmeric powder 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Paneer (cottage cheese) 100 grams

  • Garam masala powder 1 teaspoon

  • Lemon juice 2 teaspoons

  • Butter 1 teaspoon

  • coriander leaves chopped 2 tablespoons

  • Mint leaves chopped 2 tablespoons


Step 1

Heat oil in a non stick pan. Add black peppercorns, cloves, green cardamom, cinnamon and sauté for half minute.

Step 2

Add ginger, garlic and sauté for a minute. Add onions and sauté till golden brown.

Step 3

Add tomatoes and cook for five to seven minutes or till the tomatoes are soft. Add chillies and salt and sauté for a minute.

Step 4

Add coriander powder, turmeric powder, red chilli powder and mix well.

Step 5

Add mushrooms, cottage cheese and mix lightly. Add one cup water and bring to boil.

Step 6

Sprinkle garam masala powder, lemon juice and mix well. Add butter and mix well.

Step 7

Serve hot garnished with coriander and mint leaves.
