Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom Shagoti Recipe

  • Button Mushrooms chopped 35-40

  • Fresh Coconut 10

  • Black peppercorns 10

  • Carom seeds (ajwain) 1/2 teaspoon

  • Fennel seeds (saunf) 1/2 teaspoon

  • Cumin seeds 3/4 teaspoon

  • Coriander seeds 1 1/2 tablespoon

  • Cinnamon 2 one-inch

  • Dried red chillies 4

  • Poppy seeds (khuskhus/posto) 1 1/2 tablespoon

  • Coconut scraped 1 cup

  • Oil 3 tablespoons

  • Onions finely chopped 3

  • Garlic 4-6

  • Salt to taste

  • Tamarind pulp 1 tablespoon


Step 1

Dry roast cloves, peppercorns, carom seeds, fennel seeds, cumin seeds, coriander seeds, cinnamon, star anise, red chillies and poppy seeds till fragrant.

Step 2

Add coconut and roast for two to three minutes or till the coconut is lightly browned.

Step 3

Heat oil in another pan.

Step 4

Add onions and sauté.

Step 5

Grind the roasted ingredients with garlic and a little water to a fine paste.

Step 6

When the onions are well browned add mushrooms and salt and stir.

Step 7

Add the ground paste and mix well.

Step 8

Add one cup of water, tamarind pulp and simmer for three to four minutes.

Step 9

Serve hot with pav or rice or sannas.
