History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Paneer Capsicum Recipe

  • Paneer cut into triangles 200 grams

  • Green Capsicum cut into triangles 2 medium

  • Oil 1 tablespoon

  • Ginger finely chopped 1 inch piece

  • Garlic chopped 10-12 cloves

  • Coriander seeds crushed 1 teaspoon

  • Red chilli flakes 1 teaspoon

  • Green chillies finely chopped 2

  • Tomatoes finely chopped 2 medium

  • Dried fenugreek leaves (kasoori methi) crushed 1 teaspoon

  • Salt to taste

  • Lemon juice 1 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Heat oil in a non-stick pan, add ginger and garlic and sauté for one minute. Add coriander seeds, red chilli flakes and green chillies and sauté for a couple of minutes.

Step 2

Add tomatoes and cook till the tomatoes are soft. Add capsicum and sauté for four to five minutes. Add cottage cheese and toss well.

Step 3

Add dried fenugreek leaves and salt and mix well. Cover and cook for a minute. Sprinkle lemon juice and serve hot garnished with coriander leaves.
