Ingredients list for Prawn Curry with Raw Mangoes

  • 12-15 large Prawns , cleaned and deveined
  • 1 large Raw mango , peeled
  • 1 medium Onion , peeled and halved
  • 2 tsps + 1 tablespoons Coconut oil
  • 3 teaspoons Coriander seeds
  • 12-15 Black peppercorns
  • 3 Dried red chillies , seeded
  • 1 cup Fresh coconut , scraped
  • 1/2 inch Ginger , roughly chopped
  • 4-5 cloves Garlic
  • 1 tablespoon Raw rice
  • 1/2 teaspoon Turmeric powder
  • to taste Salt
  • 1 1/2 cups Rice , cooked
  • Garnish
  • 7-8 large Prawns
  • to taste Salt
  • 1 teaspoon Coconut oil

Method

  1. Quarter ½ an onion and finely chop the remaining ½.
  2. Heat 2 tsps coconut oil in a non-stick pan, add coriander seeds and black peppercorns and sauté for 1 minute.
  3. Add red chillies, quartered onion and mix well. Add coconut and mix well. Saute the mixture, stirring continuously, for 1-2 minutes on medium heat.
  4. Cool and transfer the mixture into a blender jar, add sufficient water, ginger, garlic and rice and blend to a fine paste.
  5. Heat remaining coconut oil in a deep non-stick pan, add chopped onion and sauté till translucent.
  6. Add turmeric powder, mix well and add the ground paste, mix well again and saute for a few minutes.
  7. Add 1½ cups water and salt and mix well and let the mixture come to a boil. Cook for 1 minute on low heat.
  8. Meanwhile, chop raw mango into 2 inch pieces and add to the gravy. Mix well, cover and cook for 8-10 minutes or till the mango turns soft.
  9. Add the prawns and mix well. Cover and cook for 4-5 minutes.
  10. For the garnish, take off the head and shell of the prawns, keeping the tails intact, devein and wash. Add salt and mix well.
  11. Heat coconut oil in another non-stick pan, place these prawns in it and saute for 2-3 minutes on each side.
  12. For serving, place a portion of cooked red rice (local rice) on each serving plate, put some prawn gravy over it and garnish with the sautéed prawns. Serve hot
