Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Prawns Inteha Recipe

  • Jumbo Prawns 4

  • Green Garlic 1 tablespoon

  • Cloves 3-4

  • Coriander seeds 1 tablespoon

  • Oil 2 tablespoons

  • Mustard seeds 1/4 teaspoon

  • Curry leaves 5-6

  • Caraway seeds (shahi jeera) 1/4 teaspoon

  • Onion, chopped 1 large

  • Green garlic chopped 10-12 stalks

  • Green chillies chopped 2-3

  • Coconut scraped 1/2 cup

  • Salt to taste

  • Fresh coriander leaves chopped 3 tablespoons

  • Lemon juice 2 tablespoons

  • Cheese grated 1/2 cup


Step 1

Remove head and shell jumbo prawns. Remove the vein. Slit into two lengthwise. Dry roast fennel seeds, cloves and coriander seeds. Cool and powder. Heat oil in a pan, add mustard seeds, curry leaves and caraway seeds.

Step 2

When the seeds crackle, add onion and sauté. Add green garlic and green chillies, stir and add coconut. Sauté for two to three minutes. Add prawns and stir. Sprinkle some water and add salt to taste.

Step 3

Add roasted masala powder and mix with a light hand. Add coriander leaves and mix. Sprinkle some more water and cook. Add lemon juice, mix and cook for two to three minutes. Transfer onto a dish. Sprinkle grated cheese on top and serve hot.
