Ingredients list for Seafood Pad Thai

  • 8-10 Prawns (kolambi/jhinga) shelled and deveined
  • ½ cup Fish fillets boneless, cut into cubes
  • ½ cup Clams
  • 2 cups Rice noodles boiled
  • 3 tablespoons Oil
  • 2 tablespoons Garlic chopped
  • 2 Spring onion bulbs chopped
  • to taste Salt
  • 2 tablespoons Soy sauce
  • 1 Fresh red chilli
  • 1 medium Green capsicum cut into strips
  • 1 tablespoon brown sugar/jaggery
  • Lemon juice of ½ lemon
  • 1 tablespoon Peanuts toasted
  • for garnish Spring onion greens chopped 1 tablespoon +
  • ½ cup Bean sprouts

Method

  1. Heat 2 tablespoons oil in a non-stick pan,add 1 tablespoon chopped garlic and 1 tablespoon chopped spring onion bulbs and sauté till onion turns golden.
  2. Add prawns and toss. Add fish cubes and clams and mix well. Add salt and 1 tablespoon soy sauce, mix, cover and cook on medium heat for 2-3 minutes.
  3. Heat remaining oil in another non-stick pan. Add remaining garlic and sauté for 30 seconds.
  4. Slice red chilli diagonally and add to the second pan. Add capsicum and toss. Add remaining spring onion bulbs and sauté till golden.
  5. Add noodles, remaining soy sauce, brown sugar and salt and toss to mix.
  6. Add the seafood mixture to the noodles and toss. Add lemon juice, peanuts, spring onion greens and bean sprouts and mix well.
  7. Serve hot garnished with spring onion greens.
