Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Tomato Saar Recipe

  • Tomatoes pressure cooked for 3-4 whistles 4

  • coriander leaves 8-10 sprigs

  • Garlic cloves 7-8

  • Ginger 1 inch

  • Green chillies 1-2

  • Ghee 1 tablespoon

  • Mustard seeds 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Cumin seeds 1 teaspoon

  • Asafoetida a pinch

  • Curry leaves 7-9

  • Sugar 1 tablespoon

  • Salt to taste


Step 1

Grind together coriander sprigs, garlic, ginger and green chillies along with some water to a fine paste. Transfer in a bowl and set aside.

Step 2

Grind tomatoes to a fine puree, strain into the prepared coriander paste and mix well. Add some water and mix well.

Step 3

Heat ghee in a non-stick pan. Add mustard seeds and let it splutter.

Step 4

Add turmeric powder to tomato mixture and mix well.

Step 5

Reduce heat of the pan, add cumin seeds, asafoetida and curry leaves and let curry leaves crackle. Add the tomato mixture and mix well. Add sugar and salt, stir to mix, cover and cook on low heat for 5-7 minutes.

Step 6

Serve hot.
