Ingredients list for Kumbh Pulao

  • 20-25 Button mushrooms halved
  • 1 1/2 cups Basmati rice soaked for ½ hour
  • 2-3 tablespoons Ghee
  • 6-8 Green cardamoms
  • 4-5 Cloves
  • 1 inch sti Cinnamon
  • 1/2 teaspoon Cumin seeds
  • 1/2 teaspoon Caraway seed (shahi jeera) powder
  • 2 Onion
  • 6-8 cloves Garlic
  • 1 inch piece Ginger
  • 1/2 teaspoon Red chilli powder
  • 1/4 cup Turmeric powder
  • 1 cup Yogurt
  • 1/4 teaspoon Green peas
  • 1/2 teaspoon Garam masala powder
  • to taste Salt

Method

  1. Heat ghee in a handi. Add green cardamoms, cloves, cinnamon, cumin seeds, caraway seeds and sauté till fragrant.
  2. Finely slice onions and add. Chop garlic and add. Finely chop ginger, add and sauté.
  3. When onions turn light brown, add mushrooms and mix well.
  4. Add red chilli powder, turmeric powder and sauté. Add yogurt and mix well. Add 2 cups water and mix well.
  5. Add rice and mix well. Add green peas, garam masala powder, salt and mix lightly. Cover and cook till the rice is done.
  6. Serve hot.
