Ingredients for Quinoa Stuffed Tomatoes Recipe

  • Quinoa 1 cup

  • Medium firm red tomatoes 8

  • Salt to taste

  • Black peppercorns crushed 1/4 teaspoon

  • Raisins 1-2 tablespoons

  • Spring onions chopped 1 cup

  • Fresh curly parsley chopped 3-4 sprigs

  • Lemon juice 2 teaspoons

Method

Step 1

Preheat oven to 180° C.

Step 2

Heat 2 cups of water in a non-stick pan, add quinoa, salt, crushed black peppercorns and raisins and mix. Cover and cook for 5 minutes or till half done.

Step 3

Cut a thin slice from top of the tomatoes and scoop out the pulp. Place them in a baking dish.

Step 4

Take spring onions in a bowl. Chop parsley and add. Drain the quinoa and add to the bowl. Add a little salt and lemon juice and mix well.

Step 5

Stuff this mixture into the tomatoes and arrange them in a single file in the baking dish.

Step 6

Keep the dish in the preheated oven and bake for 30 minutes.

Step 7

Take the dish out of the oven, arrange the tomatoes on a serving platter and serve hot.
