Spicy Caribbean Chicken Skewers Boneless chicken cubes marinated in orange juice, rum and some other spices, skewered on satay sticks and grilled. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 03 Mar 2017 in Recipes Course New Update Main Ingredients Boneless chicken, Birds eye chillies Cuisine Fusion Course Snacks and Starters Prep Time 1.30-2 hour Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Spicy Caribbean Chicken Skewers 250 grams Boneless chicken cut into cubes 2-3 Birds eye chillies finely chopped 2 tablespoons Orange juice Juice of 1 lemon 2 tablespoons Rum Dark 2 tablespoons Soy sauce 1 inch Ginger finely chopped to taste Crushed black peppercorns to taste Salt 1 tablespoon Garlic chopped 1 teaspoon Fennel seeds (saunf) 1 tablespoon Vinegar for greasi for basting Oil for garnishing Spring onion greens chopped Method Take orange juice, lemon juice, rum, soy sauce, ginger, bird’s eye chillies, crushed peppercorns, salt, garlic, fennel seeds and vinegar in a bowl and mix. Add chicken and mix well. Refrigerate to marinate for 2 hours. Preheat an electric griller and grease with some oil. Skew marinated chicken cubes onto the satay sticks and reserve the leftover marinade for basting. Place the skewers on preheated griller and grill, rotating the sticks and basting with the reserved marinade and some oil, till golden from all sides and fully cooked.
