Ingredients list for Andhra Style Mutton Curry

  • 500 grams Mutton on bone, cut into pieces
  • ½ teaspoon Turmeric powder
  • to taste Salt
  • 1 inch Cinnamon
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Fennel seeds (saunf)
  • 4-5 Peppercorns
  • 3-4 Green cardamom
  • 1 teaspoon Coriander seeds
  • 2 tablespoons Poppy seeds (khuskhus/posto)
  • 2 tablespoons Oil
  • 5-6 Curry leaves
  • 3 medium Onions finely chopped
  • 1 tablespoon Ginger-garlic paste
  • 2 medium Tomatoes finely chopped
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Crushed black peppercorns
  • 1 tablespoon Fresh coriander leaves chopped

Method

  1. Take mutton in a bowl. Add salt and turmeric powder, mix well and set aside for 5 minutes.
  2. Pressure cook mutton with 1 cup water till one whistle. Reduce heat and simmer for 10-12 minutes.
  3. Dry roast cinnamon, cumin seeds, fennel seeds, peppercorns, cardamoms, coriander seeds and poppy seeds for 1-2 minutes
  4. Heat oil in a non-stick kadai. Add curry leaves and onion and sauté for 2-3 minutes. Add tomato, mix and cook till tomatoes turn pulpy.
  5. Grind the roasted spices to a fine powder.
  6. Add ginger-garlic paste to the onion-tomato mixture and sauté. Add the ground powder, mix well and cook for 3-4 minutes. Add red chilli powder and mix.
  7. Add the pressure cooked mutton and mix well. Cover and cook till the mutton is completely cooked.
  8. Add crushed peppercorns, chopped coriander and mix well.
  9. Serve hot.
