Yes, though other meats being more common, biryani eaters all over the world can easily swear by mutton. And not just biryanis, curries, bakes and all other preparations with this wonderful meat are always special. Did you know, unlike other dishes, a day-old mutton prep will always be all the more tastier on the palate! Try it the next time you plan on to take on this meat.

Ingredients for Badami Gosht Recipe

  • Mutton blanched 1/2

  • Coconut milk 500 grams

  • Saffron (kesar) 8-10 strands

  • Yogurt 2 cups

  • Caraway seeds (shahi jeera) 2 cups

  • Salt to taste

  • Ghee 1/4 cup

  • Cinnamon 2 Stick

  • Green cardamom seeds 1/2 teaspoon

  • Cloves 6

  • Onions chopped 3 large

  • Ginger chopped 2 teaspoons

  • Garlic chopped 3 cloves

  • Coconut milk 2 cups

Method

Step 1

Add one third cup hot water to saffron strands and keep aside.

Step 2

Mix yogurt, caraway seeds, salt and saffron in a bowl.

Step 3

Add mutton and marinate for thirty minutes.Heat ghee in a non stick pan.

Step 4

Add cinnamon, cardamom, cloves. Sauté for one minute.

Step 5

Add onions, ginger, garlic and sauté till onions are golden brown.

Step 6

Remove the mutton pieces from the marinade and add to the pan. Sauté for six to eight minutes.

Step 7

Add half cup water, almond paste, chilli flakes to the marinade. Sauté for ten minutes.

Step 8

Add coconut milk, simmer and cook till the mutton is tender.

Step 9

Remove the whole spices at the time of serving and serve hot.
