  • 800 grams Mutton cut into small pieces on the bone
  • 4 tablespoons Yogurt
  • 1 tablespoon Cumin seeds
  • 2 Bay leaves
  • 2 one inch sticks Cinnamon
  • 6-8 Cloves
  • 4-5 Black cardamoms
  • 4-5 Green cardamoms
  • 1 tablespoon Black peppercorns
  • 3-4 tablespoons Oil
  • 3 Onions
  • 2 tablespoons Ginger-garlic paste
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • 3 Green chilli broken
  • 2 tablespoons Coriander seeds
  • 2 tablespoons Fresh coriander leaves

  1. Heat a kadai. Add coriander seeds, cumin seeds, bay leaves, cinnamon, cloves, black cardamoms, green cardamoms, black peppercorns and dry roast on low heat. Cool and grind coarsely.
  2. Heat oil in a kadai. Finely slice the onions and sauté till golden. Add mutton and mix well. Sprinkle a little water, so that the onions do not burn and continue to sauté.
  3. Add ginger-garlic paste and sauté till the colour of the mutton changes. Add salt and mix. Add 1½ cups water, cover and cook, stirring at regular intervals, for 20-25 minutes or till the mutton is tender.
  4. Add turmeric powder, green chillies, yogurt and mix. Add the ground spices and mix. Add fresh coriander and mix. TraAdd turmeric powder, green chillies, yogurt and mix.
