Ingredients list for Prawns Inteha

  • 4 Prawns
  • 10-12 stalks Green garlic chopped
  • 1 tablespoon Fennel seeds (saunf)
  • 3-4 Cloves
  • 1 tablespoon Coriander seeds
  • 2 tablespoons Oil
  • 1/4 teaspoon Mustard seeds
  • 5-6 Curry leaves
  • 1/4 teaspoon Caraway seeds (shahi jeera)
  • 1 large Onion chopped
  • 2-3 Green chillies chopped
  • 1/2 cup Coconut scraped
  • to taste Salt
  • 3 tablespoons Fresh coriander leaves chopped
  • 2 tablespoons Lemon juice
  • 1/2 cup Cheese grated

Method

  1. Remove head and shell jumbo prawns. Remove the vein. Slit into two lengthwise.
  2. Dry roast fennel seeds, cloves and coriander seeds. Cool and powder.
  3. Heat oil in a pan, add mustard seeds, curry leaves and caraway seeds. When the seeds crackle, add onion and sauté. Add green garlic and green chillies, stir and add coconut. Sauté for two to three minutes.
  4. Add prawns and stir. Sprinkle some water and add salt to taste. Add roasted masala powder and mix with a light hand. Add coriander leaves and mix.
  5. Sprinkle some more water and cook. Add lemon juice, mix and cook for two to three minutes.
  6. Transfer onto a dish.
  7. Sprinkle grated cheese on top and serve hot.
