Salad With Pear And Almond

Ingredients 

  • 2 pears
  • 5-6 almonds
  • 2 medium onions
  • 1 tablespoon oil
  • Salt to taste
  • 4 teaspoons sugar
  • 1/2 large red capsicum
  • 1/2 large green capsicum
  • 1 garlic clove
  • 1 teaspoon olive oil
  • 1 tablespoon vinegar
  • 1 small broccoli, separated into florets
  • 1/4 teaspoon crushed red chillies
  • A pinch of oregano
  • 5-6 iceberg lettuce leaves
  • 7-8 green olives, pitted
  • 7-8 black olives, pitted

Method

  1. Cut pears into big pieces. Cut 1 onion into big cubes. Heat 1 tbsp oil in a non stick pan, add onion and pears and sauté. Add salt, sugar and mix well. Cook till pears soften.
  2. Cut red and green capsicum into small cubes. Cut the remaining onion into small cubes and separate the layers. Add a little water to the pears and cook. Heat water in another non stick pan and add a pinch of salt.
  3. Cool the pears a little, put into a blender jar. Add almonds and garlic and grind. Add olive oil, vinegar and salt and grind again. Put broccoli florets in the hot water and blanch. Drain and soak in chilled water.
  4. Transfer the pears mixture into a bowl, add crushed red chillies, oregano and mix. Dry lettuce leaves. Drain the broccoli florets. Put red and green capsicums and onion into a large bowl. Tear lettuce leaves and add. Add green and black olives, broccoli and dressing and mix well. Serve.
