Ingredients
- 750 grams chicken on the bone, cut into 8 pieces
- 1 dried bhut jolokia chilli, chopped
- 2 tablespoons ghee
- 2 medium onions, chopped
- 1 inch ginger, chopped
- 3-4 garlic cloves, chopped
- 1 teaspoon turmeric powder
- 2 teaspoons cumin powder
- 1 teaspoon coriander powder
- 2 teaspoons garam masala powder
- ½ teaspoon red chilli powder
- 2 tablespoons tomato puree
- Salt to taste
- Fresh coriander sprig for garnish
- Steamed rice for serving
Method
- Heat 1 tablespoon ghee in a small non-stick pan, add onions, ginger and garlic, mix and sauté till onions are translucent. Add bhut jolokia chilli, mix and sauté.
- Remove the pan from heat and allow to cool slightly. Transfer into a grinder jar, add ½ cup water and grind into a smooth paste.
- Heat 1 tablespoon ghee in another non-stick pan, add chicken pieces and sauté on high heat for 2-3 minutes.
- Add turmeric powder, cumin powder, coriander powder, garam masala powder, red chilli powder and tomato puree, mix and sauté for 5-6 minutes.
- Add chilli-onion paste and salt and mix well. Rinse the grinder jar with 2 cups of water and add and mix well. Cover and cook for 10-15 minutes.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot with steamed rice.
