Ingredients

  • 750 grams chicken on the bone, cut into 8 pieces
  • 1 dried bhut jolokia chilli, chopped
  • 2 tablespoons ghee
  • 2 medium onions, chopped
  • 1 inch ginger, chopped
  • 3-4 garlic cloves, chopped
  • 1 teaspoon turmeric powder
  • 2 teaspoons cumin powder
  • 1 teaspoon coriander powder
  • 2 teaspoons garam masala powder
  • ½ teaspoon red chilli powder
  • 2 tablespoons tomato puree
  • Salt to taste
  • Fresh coriander sprig for garnish
  • Steamed rice for serving

Method

  1. Heat 1 tablespoon ghee in a small non-stick pan, add onions, ginger and garlic, mix and sauté till onions are translucent. Add bhut jolokia chilli, mix and sauté.
  2. Remove the pan from heat and allow to cool slightly. Transfer into a grinder jar, add ½ cup water and grind into a smooth paste.
  3. Heat 1 tablespoon ghee in another non-stick pan, add chicken pieces and sauté on high heat for 2-3 minutes.
  4. Add turmeric powder, cumin powder, coriander powder, garam masala powder, red chilli powder and tomato puree, mix and sauté for 5-6 minutes.
  5. Add chilli-onion paste and salt and mix well. Rinse the grinder jar with 2 cups of water and add and mix well. Cover and cook for 10-15 minutes.
  6. Transfer into a serving bowl, garnish with coriander sprig and serve hot with steamed rice.
