Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Mappas Recipe

  • Chicken cut into 1 cm pieces 1 kilogram

  • Potatoes peeled and sliced 2 medium

  • Salt to taste

  • Coconut oil 4 tablespoons

  • Mustard seeds 1 teaspoon

  • Ginger 1 teaspoon

  • Garlic chopped 1 teaspoon

  • Onions sliced 5 medium

  • Green chillies 5

  • Curry leaves 15-20

  • Turmeric powder 3/4 teaspoon

  • Tomatoes sliced 2 medium

  • Coriander powder 2 tablespoons

  • Fennel seeds (saunf) 1 teaspoon

  • Thin coconut milk 2 cups

  • Garam masala 1 teaspoon

  • Sugar 1/2 teaspoon

  • Thick coconut milk 1 cup

Method

Step 1

Boil water in a deep pan. Add potatoes, salt and cook till dome. Drain and set aside.

Step 2

Heat oil in a non stick pan. Add mustard seeds. Once they splutter, add ginger and garlic.

Step 3

Sauté for half minute. Add onion, green chillies, curry leaves, salt and sauté for four to five minutes.

Step 4

Add turmeric powder, tomatoes. Cover and cook on low heat for five to six minutes or till the tomatoes are soft.

Step 5

Grind coriander powder, fennel seeds to a fine paste with sufficient water. Add this to the pan and mix well.

Step 6

Add chicken pieces and sauté for five minutes. Add thin coconut milk.

Step 7

Cover and cook till chicken is almost done. Add potatoes, garam masala powder and mix well.

Step 8

Add sugar and cook till gravy thickens and the chicken is completely cooked.

Step 9

Add thick coconut milk and mix well.Simmer for two minutes.

Step 10

Serve hot with appam, chapati or bread.
